Ingredients:


1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup coconut milk

1 cup shredded coconut

1 cup fresh cherries, pitted and halved

Additional shredded coconut for garnish (optional)

Instructions:


Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.


Prepare Dry Ingredients: In a mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.


Cream Butter and Sugar: In a separate mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.


Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, until well combined.


Alternate Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the coconut milk. Mix until just combined, being careful not to overmix.


Fold in Shredded Coconut: Gently fold in the shredded coconut until evenly distributed throughout the batter.


Fold in Cherries: Carefully fold in the halved cherries, ensuring they are evenly distributed throughout the batter.


Transfer to Pan: Pour the batter into the prepared cake pan, spreading it out evenly with a spatula.


Bake: Place the cake pan in the preheated oven and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is firm to the touch.


Cool and Garnish: Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, garnish the top of the cake with additional shredded coconut, if desired.
